Weekends in
Limuru, Kenya are pretty laid back and restful. For the most part. It's kind of like living in Alaska - you have to be creative with your entertainment. So we created our own Mexican Fiesta on Saturday night. Our good friends, Clayton and Clara, came over. We looked up recipes on-line and made our menu. (We recommend
Homesick Texan for great Mexican cuisine at home.) Then we headed to
Nakumat (the Kenyan version of Super
Walmart, but much less "super") and bought our
fixin's. Back at the
Limuru ranch, Clara made bean dip, and Will and I made tortillas from scratch. During the process, Will's comment was, "Now I know why people buy these. They take too long to make." I agreed, but you can't buy tortillas in Kenya, so we ended up with our homemade stack, which looked pretty good, in my opinion.
Clayton made nachos for an appetizer.
While my Mexican rice was boiling, Clara made enchiladas with our homemade tortillas.
When we sat down and looked at our hard work, we realized that it was a LOT of food for four people. So our Mexican party continued into Sunday lunch. Fiesta!
